Until the 22nd of December, the truffle – the white and the black – is honoured at the Saint James Paris. This year again, the chef Cyrille Robert has imagined some refined dainties around this famous mushroom. Pasta Marguerite Risotto of white truffle from Alba, duck foie gras, velvety polenta, medallion of veal shank, carpaccio of kernel of scallops, but also iced mousse or creamed chocolate… From starter to dessert, you can have a delicious meal “Only truffle”. The sommelier has selected a list of wines in order to pair delicacies and wine and sublimate this greatly prized mushroom.
